New Chef in Town

Tonight Steve announced that he and I "need to go to Lowe's RIGHT NOW." I need to cook supper. "THERE'S NO TIME. WE MUST LEAVE NOW!" Brooke announced she didn't want to go to Lowe's. So I asked if she wanted to stay home and cook supper. She jumped at the chance! Not only did she have to cook the supper, I made her double the recipe because of the amount of salmon I had purchased.

Here's what Steve and I arrived home to - a delicious supper on the table and looking great!




Garnish? She garnished the plates? Wow! Has that girl been watching FoodTV or what?



Maple-Glazed Salmon with Couscous

1 can (14 oz) chicken broth
1/2 cup golden raisins
1 tsp olive oil
1/4 tsp salt
1 cup uncooked plain couscous
2 tbsp EACH maple syrup and stone-ground mustard
1 tbsp EACH brown sugar and lemon juice
4 salmon fillets (4-6 oz each)
Salt and ground black pepper
1/4 cup EACH snipped fresh chives and toasted cashews



Brooke did ours in the oven because our grill died. But this is how the recipe reads:

Prepare grill for direct cooking over medium coals. In 2 quart saucepan, combine broth, raisins, oil, and salt; bring to a boil. Stir in couscous; cover and remove from heat. Let stand at least 5 minutes.


Meanwhile, combine syrup, mustard, brown sugar, and lemon juice in a small bowl; mix well. Season salmon with salt and black pepper. Lightly grease grid of grill. Grill salmon, covered, 3 minutes. Carefully turn salmon and brush with glaze. Grill 2-3 minutes or until salmon flakes easily with a fork. Remove from grill.


To serve, fluff couscous with fork; stir in chives and sprinkle with cashews. Serve with salmon. (Brooke says, "Garnish plate with whole chive sprigs.")

Yield: 4 servings


It's obvious from the above pictures that Brooke's supper was enjoyed by all! Um, Brooke, what's for supper tomorrow? :^D

LOL! I adore couscous! I prefer a whole grain, but all our local Wal-Mart had was white, although I'm surprised they had it at all! I'm sure I'm the only people in our parish whose ever bought it! :^D

Wow - you definitely have a budding chef on your hands. Love the garnish! Where did she find the recipe? Was it one you left for her or did she pick it herself?

Do you have the girls help with meals regularly?
